Pumpkin Spice Truffles

Pumpkin Spice Truffles

You love bold, rich flavors that really pack a punch, so we would like to recommend these amazing Pumpkin Spice Truffles from Sally's Baking Addiction.

What You'll Need:

- 2 ounces (55g) full-fat cream cheese, softened to room temperature
- 2 Tablespoons (15g) confectioners' sugar
- 1/3 cup (72g) pumpkin puree
- 1 and 3/4 cups (175g) graham cracker crumbs (about 12 full sheet graham crackers)
- 1/2 teaspoon pumpkin pie spice
- 1 1/2 teaspoon ground cinnamon
- 4 ounces (113g) white chocolate, coarsely chopped and melted
- 10 ounces (283g) semi-sweet or white chocolate, coarsely chopped
- optional garnish: extra graham cracker crumbs or cinnamon/sugar

How To Make Them:

1. With a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and sugar together in a large bowl until creamy - about 2 minutes. Add the pumpkin and beat on high until combined. Add the graham cracker crumbs, pumpkin pie spice, cinnamon, and melted chocolate. Beat on medium speed for 2 minutes until everything is combined. The mixture is supposed to be soft and thick. Cover mixture tightly and refrigerate for 1 hour or up to 24 hours. Chilling is mandatory.

2. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

3. Begin rolling chilled mixture into balls (about 1 teaspoon per ball) and place the balls on the baking sheets. You should have around 35 total. Chill balls in the refrigerator for 30 minutes or up to 24 hours.

4. During the last few minutes of the chilling time, begin melting the chocolate. You can melt the chocolate in a double boiler or the microwave. If using the microwave: place the chocolate in a medium heat-proof bowl. I like to use a liquid measuring cup. Its depth makes it easier for dipping the truffles. Melt in 30 second increments in the microwave, stirring after each increment until completely melted and smooth. Let the warm chocolate sit for 5 minutes to slightly cool before dipping. Alternatively, you can temper the chocolate. If tempering, do not place or store truffles in the refrigerator.

5. Remove balls from the refrigerator and dip them in the chocolate using a dipping tool. When lifting the truffle out of the chocolate, remember to tap the dipping tool gently on the side of the bowl to allow excess chocolate to drip off. Top truffles with a sprinkle of graham cracker crumbs, if desired.

6. Place balls back onto the baking sheet after you dip each one. Allow chocolate to completely set in the refrigerator before serving. Truffles are OK at room temperature for a few hours for serving.

You're a busy person, and you know that sometimes working smarter and not harder can give you an end result just as delicious as if you had spent an eternity in the kitchen. For you, we recommend this super simple and totally delicious Pumpkin Spice Dump Cake from The Frugal Girls.

What You'll Need:

- 1 box Spice Cake Mix
- Butter {1 stick, ½ cup or 8 tbsp.}, melted
- 1 can Pumpkin Pie Mix {30 oz.}
- 1 tsp. Pumpkin Pie Spice

How To Make It:

1. Preheat oven to 350 degrees. Spray 9x13 baking dish with nonstick cooking spray. Evenly spread out Pumpkin Pie Mix in baking dish.

2. In medium mixing bowl, combine dry Spice Cake Mix, Pumpkin Pie Spice, and melted Butter, and stir until crumbly. {break up any large chunks into small crumbles with spoon}.

3. Sprinkle cake/crumble mixture evenly over pumpkin layer in baking dish. Bake for 25 minutes, or until hot.

4. Serve with some whip cream on top, and a scoop of vanilla ice cream.

Pumpkin Spice Baked Apples

Pumpkin Spice Baked Apples

What You'll Need For Each Apple:

- 1 apple
- 1 tablespoon honey or maple syrup
- ½ teaspoon pumpkin spice
- Dried cranberries - fruit juice sweetened
- Walnuts

How To Make It:

1. Core each apple and place in a baking dish.

2. Fill the core with fruit juice sweetened cranberries. Pour honey down the center, over the cranberries. Sprinkle ½ tsp. Pumpkin Spice over your apple.

3. Place your apple in the oven, and bake at 350 F until you can easily puncture it with a knife. It should be quite soft. This will take about 20 minutes. Remove from oven, and allow to cool. Cut open and top with a small handful of walnuts.

Pumpkin Spice Cheesecake

You're a lover of classic cooking, and you love nothing better than a little comfort food. So, we'd like to offer this slight twist on a traditional pumpkin pie, Pumpkin Spice Cheesecake from Saveur.

What You'll Need:

- 13 oz. gingersnap cookies
- 1⁄2 cup chopped walnuts
- 1⁄2 cup confectioners' sugar
- 8 tbsp. unsalted butter, melted
- 1 3⁄4 lb. cream cheese, softened
- 1 cup sugar
- 3⁄4 cup canned pumpkin
- 3 tbsp. dark rum
- 1 1⁄2 tsp. ground cinnamon
- 1 tsp. vanilla extract
- 1⁄2 tsp. kosher salt
- 1⁄4 tsp. ground cloves
- 1⁄4 tsp. ground ginger
- 1⁄4 tsp. ground mace
- 2 eggs

How To Make It:

1. Heat oven to 350°. Process gingersnaps, walnuts, and confectioners' sugar in a food processor until finely ground. Add butter; pulse until evenly combined. Transfer to a 9" springform pan set on a rimmed baking sheet, and press crumbs into the bottom and halfway up the sides of the pan; set aside.

2. Clean food processor, and then add cream cheese, sugar, pumpkin, rum, cinnamon, vanilla, salt, cloves, ginger, mace, and eggs; puree, stopping to scrape down bowl with a rubber spatula at least once, until smooth. Pour into crust; bake until browned on top and the middle jiggles slightly when the pan is tapped, about 1 1⁄2 hours. Let cool to room temperature; chill until set, at least 4 hours or overnight.
