Easy Lunches Anyone Can Make At Home

It's 12:30 and your usual lunch squad is nowhere to be found. That's probably because you're working from home. When you can't go out for your daily chopped salad or hot sandwich, try making these simple and yummy lunches at home!

4 Grilled Cheese Sandwich

Ingredients

1 slice of cheddar cheese
1 slice of gouda cheese
1 slice of Swiss cheese
1 slice of pepper jack cheese
2 slices of bread (any kind)
2 tablespoons of butter

Here's how you do it

Directions

1.

Spread a tablespoon of butter on one side of each piece of bread.
2.

Assemble the cheese on the unbuttered sides.
3.

Heat a pan with the rest of the butter. Once melted, place the bread on the pan butter side down. When the bread is golden brown and the cheese starts to melt, flip one slice onto the other and cook for another 30 seconds.

Warm Buddha Bowl

Ingredients

Base options (choose 1): 1 cup quinoa, rice, barley, farro
Veggies: 2 tablespoons olive oil (or coconut or avocado), 1/2 cup of roasted kale, 1/3 cup roasted sweet potato, broccoli, edamame, red onion, chickpeas (and anything else in your fridge or pantry that adds color!)
Protein options: beans, grilled chicken, tofu, salmon, hard boiled egg
Dressing: 1/4 cup olive oil, 1/4 cup lemon juice, salt and pepper (optional)

Here's how you do it

Directions

1.

For the base: Try to opt for a bag of frozen grains. It is much faster to microwave than cook rice or quinoa for 20 minutes. If not, follow cooking instructions on box.
2.

For the veggies: Preheat the oven to 400 degrees F.
3.

Cut the sweet potatoes into 1-inch cubes so they cook faster.
4.

Set aside the kale (if you put it in for too long it can burn). Spread the other vegetables on a tin baking tray and drizzle with olive oil, salt and pepper. Massage the vegetables so they are all coated.
5.

Cook in oven for 15-20 minutes. 5 minutes before they're fully roasted, put the kale in the oven.
6.

In a small bowl, combine the olive oil and squeezed lemon juice (and whatever spices you want) to make the dressing.
7.

Time to assemble! In a medium bowl, make a bed of grains. Then place the veggies in their own spots or wherever you like.
8.

Top with your favorite protein.
9.

Drizzle the dressing on top and enjoy!

Turkey BLT

Ingredients

2-4 pieces of bacon
Sliced turkey
Iceberg lettuce (or your favorite green - kale, spinach, sprouts)
Sliced tomato
2 pieces of your favorite bread
Spread (mayo, chipotle aioli, avocado)

Here's how you do it

Directions

In a frying pan, cook the bacon until crispy.
Toast the bread until golden brown.
Time to assemble! On one piece of bread, spread the mayo (or mashed avo, aioli) and layer the sliced turkey, lettuce, tomato, and bacon on the other. Put together and enjoy!

Chicken Lettuce Wraps

Ingredients

2 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon brown sugar
1/2 tablespoon rice vinegar
4 pieces of bib or butter lettuce
3/4 pound of ground chicken (or turkey or beef)
1 cup shredded carrots
1 cup cucumbers
Mint or cilantro (optional)

Here's how you do it

Directions

In a small bowl mix 1 tablespoon oil, soy sauce, sugar and vinegar.
In a pan, heat the remaining oil and add the meat. Cook until browned and separate into crumbles. Add 1/4 of the sauce mixture and continue cooking for 4 minutes.
Time to assemble! Scoop some chicken into each lettuce cup and top with shredded carrots and halved cucumbers. Drizzle the remaining soy sauce mix on each wrap and garnish with the mint or cilantro.
