Fig Preserves

6 cups ripe figs, cleaned and halved

4 cups granulated sugar

Place the figs and sugar in a medium, nonreactive saucepan. Stir until moist. Heat over medium heat until the sugar melts and the figs begin to soften, stirring frequently. Let the mixture bubble 3 to 5 minutes (the sugar should make a syrup). Remove and place in hot sterilized jars or cool and store in an airtight container in the refrigerator. Makes 6-8 half pints.
