Beef Barley Soup

Beef Barley Soup

If you want a soup that's hearty, packed with flavor and texture, and unbelievably easy, we recommend this classic from The Food Charlatan.

What you'll need:

- 2 pounds stew meat (nicely marbled beef chunks)
- salt and pepper
- 2 tablespoons oil
- 10 cups water
- 3 mounded tablespoons beef base
- 3 stalks celery (about 2 cups), chopped
- 2 onions, chopped
- 5 cloves garlic, minced
- 1 large potato, peeled and shredded, about 2 cups
- 3-4 large carrots, peeled and shredded, about 2 cups
- 1 cup pearl barley, rinsed

How to make it:

1. In a large pan, brown the meat, then move the browned meat to a large slow cooker.

2. Add 2 cups of the water to the pan and bring to a boil. Stir up all the browned bits. Add this and the remaining 8 cups of water to the slow cooker.

3. Add the beef base, celery, onions, and garlic to the slow cooker and stir.

4. Cook on low for about 6 hours. Add the potatoes and carrots and cook for another hour.

5. Add the barley and simmer for another hour or so, until it is tender.

Chicken Tortellini Soup

Chicken Tortellini Soup

For a deliciously cheesy and unbelievably easy twist on a sick day classic, we recommend this fabulous recipe from The Recipe Critic.

What you'll need:

- 1½ pounds boneless chicken breast
- 3 medium carrots, peeled and diced
- 3 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low sodium chicken broth
- 1 cup water
- 2 bay leaves
- 1 teaspoon Italian seasoning, or more to taste
- 2 cups cheese tortellini
- chopped fresh parsley for serving, if desired
- salt and pepper to taste

How to make it:

1. Add all of the ingredients to a slow cooker except for the tortellini.

2. Cook on low for 6 hours.

3. Remove the cooked chicken from the slow cooker and shred or cube and add back to the slow cooker.

4. Add in the tortellini and cook for 15 minutes or until they are cooked all the way through.

5. Season with salt and pepper to taste. Discard bay leaves and serve immediately with chopped parsley, if desired.

Lemon Rosemary Lentil Soup

Lemon Rosemary Lentil Soup

For a meatless meal that's ultra-filling but still light and bright, we recommend this super easy recipe from Melanie Makes.

What you'll need:

- 6 carrots, diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 yellow pepper, chopped
- 1/8 teaspoon cayenne pepper
- 3 cups red lentils
- 4 cups chicken broth
- 2-3/4 cups water
- 1-1/2 teaspoons salt
- 1 lemon, zest and juice
- 1 tablespoon fresh rosemary, chopped

How to make it:

1. In a six quart slow cooker, add all ingredients EXCEPT lemon zest and juice and rosemary.

2. Cook on LOW for 6 hours.

3. Stir in lemon zest, juice and rosemary.

4. Season with additional salt and pepper to taste.

5. Ladle into bowls and garnish with additional chopped rosemary if desired.

Black Bean Soup

Black Bean Soup

For a super delicious and super healthy vegetarian soup that will warm you up and fill you up, we recommend this recipe from Budget Bytes.

What you'll need:

- 2 cloves garlic
- 1 medium onion
- 2 stalks celery
- 2 medium carrots
- 1 lb dry uncooked black beans
- 1 cup salsa
- 1 Tbsp chili powder
- 1/2 Tbsp cumin
- 1 tsp oregano
- 4 cups vegetable broth
- 2 cups water

How to make it:

1. Mince the garlic, dice the onion and celery, and grate the carrots on a large holed cheese grater. Rinse the black beans in a colander under cool running water and pick out any stones or debris.

2. Combine the garlic, onion, celery, carrots, black beans, salsa, chili powder, cumin, oregano, vegetable broth, and water in a 5-7 quart slow cooker. Stir well.

3. Place the lid on the slow cooker and cook on high for 6-8 hours (you want the beans to get VERY soft). Once the beans are very soft, use an immersion blender** to blend the soup until it is thick and creamy (leave some beans whole if desired). Taste the soup and add salt if needed (this will depend on the brand of vegetable broth used).
