It happens when molecules and small particles in the atmosphere change the direction of light rays causing them to move apart, called 'scattering'.
Scattering affects the colour of light coming from the sky.

The short-wavelength blue and violet are scattered by molecules in the air much more than other colours of the spectrum.
Of the two, we see the sky as blue rather than violet because our eyes are more attuned to that colour.
So, the extent of the wavelength and the size of the particle can affect the colour we see in the sky.

It can also affect the colours in a sunrise and a sunset.
During these times, the sun is low on the horizon, meaning that sunlight passes through more air at sunset and sunrise than during the day, when the sun is higher in the sky.

More atmosphere means more molecules to scatter the violet and blue light away from your eyes.
And, if the path is long enough, all of the blue and violet light scatters out of your line of sight whilst the other colours continue on their way to our eyes.
This is why sunsets are often yellow, orange, and red because red has the longest wavelength of any visible light.
The sun will appear red when it’s on the horizon, as the long path through the atmosphere blocks all other colours.
