Just suggests Caledonia Spirits’ Barr Hill gin, which is distilled from raw honey and juniper berries. You may skip the Lavender Powder, and the drink still will be delicious.
Ingredients
2 ounces gin (preferably Barr Hill)
3/4 ounce (1 1/2 tablespoons) raw-honey syrup (see recipe below)
1/2 ounce (1 tablespoon) fresh lemon juice
Lavender Powder (see recipe below), for garnish
Honey-Lavender Spritz (see recipe below), for misting the drink

To make the raw honey syrup:
Dissolve three parts raw honey with two parts very hot water, and mix well. (For instance, you may use 1 cup of honey and 2/3 cup of water. Heat the water until it’s just about to boil, and stir into honey.) Store any leftovers in a covered container in the refrigerator.
