Curried Cauliflower and Lentil Soup

This curried cauliflower and lentil soup has only 5 ingredients! Cauliflower, lentils, fennel seeds, lemon juice and curry paste. The creaminess comes from the cauliflower. You'll first need to roast 1/4 head of cauliflower in 1 tbsp of oil and 1 tsp of fennel seeds. Meanwhile, heat 1 tbsp of oil in a pan and add another tsp of fennel seeds. Toast for 1 minute then add in the remaining 3/4 of the cauliflower head, 150g of red lentils, 3 tbsp of curry paste and 1 litre of water. Bring to a boil and reduce to simmer for about 20 minutes or until the cauliflower is tender. Blend in a blender until smooth, add in juice from half a lemon and then top with the roasted cauliflower. Yum!

Spinach and Salmon Pasta

All you need for this recipe is penne pasta, salmon, spinach and sun-dried tomatoes. Simple! Just cook the pasta according to package instructions. Fry the salmon and a few chopped sundried tomatoes in a pan with a bit of the oil from the jar until the salmon is cooked through. Cut it into pieces then toss the pasta with a large handful of spinach in with the salmon. Toss until the spinach is wilted and voila! Dinner is served.

Chicken Enchilada Casserole

How can a dish like this only have 4 ingredients!? Trust us, it's true! Toss 2 cups of shredded rotisserie chicken, 3/4 cups of enchilada sauce and 1/2 cup of cheddar cheese together in a bowl. Cover the bottom of a casserole dish with flour tortillas, top with half the chicken mix, then repeat with another layer of tortillas and chicken. End with a 1/2 cup of enchilada sauce. Cover with tin foil and bake for 30 minutes at 350F. Remove from the oven and sprinkle on 1/2 cup of cheese and bake again until just melted. Top with garnishes like olives, green onions, tomatoes and avocados.

Crunchy Lemony Breaded Chicken

This is a great quick and easy dish for any day of the week! Filet two chicken breasts so you have 4 thin pieces. Pound out the chicken to about 1/4 inch thick. In one bowl, add 1/3 cup of lemon juice. In another bowl add in about 1/2 cup of breadcrumbs. To begin, place the pieces of chicken in the lemon juice for about 4 minutes, then dip in the breadcrumbs, pressing to make sure the crumbs stick. Then, sprinkle with lemon pepper and transfer to a pan and fry until golden brown and cooked through. Serve with a lemon wedge and parsley. Muah!

Coconut Curry

Nothing is quicker and easier than coconut curry! This one only has 4 ingredients and it's a breeze to make. Sauté about two cups of broccoli in a pan with a tablespoon of oil. Once lightly browned add in a can of coconut milk, 2 tablespoons of curry paste and 1 can of chickpeas. Bring to a simmer and cook until the coconut milk has reduced and has formed a thick, creamy sauce. Serve with rice and there you go! Delicious curry!

Paleo Shrimp and Grits

Shrimp and grits sounds complicated but we promise it couldn't be more simple! Steam 1 bag of frozen cauliflower with 1 clove of garlic (chopped) until tender. Add to a food processor with 2 tablespoons of butter until crumb or rice-like texture. Season with salt and add a bit more water if desired. Pat 1 pound of raw shrimp dry and coat with cajun seasoning so it almost forms a crust. Fry in butter or ghee until just cooked. Add a spoonful of grits to the plate and a good helping of shrimp. What's better than that!?

Pesto Pizza

It's a classic recipe...pesto pizza and yes...it's as easy as it looks. Roll out your pre-made pizza dough into a pizza shape. Place on a heated pizza stone and bake for about ten minutes or until golden brown. Smear on some pesto, sliced tomatoes and shredded parmesan and bake until the tomatoes are just warmed through. Mamma Mia! It's a 4-ingredient pizza!

Sriracha Chicken Salad Sandwich

Sriracha...good. Chicken...good. Sandwich...GOOD! So you're gonna want to shred about 2 cups of rotisserie chicken. Mix the chicken with 2 tablespoons of mayo, 1 teaspoon of sriracha and a 1/4 cup of minced onion. Spread onto two pieces of bread and you've got a sandwich for the ages.

Homemade Mac and Cheese

Cook two cups of macaroni noodles to al dente. Melt 1/4 cup of butter and a 1/4 cup of cornstarch in a sauce pan. Stir until thick. Add 2 cups of milk and 1/2 cup of grated gruyere cheese. Stir until melted. Add in macaroni noodles and stir until coated. Serve!

Homemade Toaster Tarts

Who says you can't have toaster tarts for dinner? Pulse 1 tablespoon of sugar, a pinch of salt and 3 1/4 cups of flour in a food processor. Add 3/4 cup of cold butter and pulse until large peas form. Whisk 2 eggs and 4 tbsp of ice water and drizzle in while you pulse the food processor. Knead dough together in a big ball, cover and chill for 1 hour. Roll out dough and cut rectangles with a metal pastry cutter. Brush egg wash on the edges of the rectangles, dollop some jam in the middle, and top with a rectangle. Brush the tops wth egg wash and sprinkle with sugar. Cut some slashes on each tart and bake at 350F for 20-25 minutes. So good.

Egg-Lettuce-Tomato Sandwich

Ok, we get it...it's just a sandwich but doesn't it look good!? Spread white bread with a thin layer of mayonnaise, transfer to a pan and fry on both sides. Spread on more mayo, add sliced tomato, sliced soft-boiled egg and lettuce, season with salt and pepper, add put the other slice of bread on top and EAT!
